Cove Blades operates in North Vancouver — a destination beloved by mountain bikers and outdoor enthusiasts, positioned across the harbour from Vancouver. The area boasts three nearby ski hills: Cypress, Grouse, and Seymour Mountain. Located on the far east side of the shore near Deep Cove village, the business emerged from founder Erik's dual passions.
The origin story
Erik's background combines two core interests: culinary excellence and mountain biking. As a knife enthusiast, he prepares Dutch-inspired recipes that delight family and friends — Nasi Gado Gado with peanut satay being a household favourite. His professional background in aircraft maintenance proved instrumental; the precision required in aviation aligned naturally with knife sharpening.
That technical foundation enables mastery across sharpening variables: bevel angles, leading versus trailing-edge techniques, stone versus belt methods, grind patterns, grit specifications, Japanese whetstones, and ceramic versus steel honing rods.
Business philosophy
Cove Blades serves local commercial kitchens and restaurants, recognizing that sharp knives = happy kitchen staff. The operation adopts a hybrid model — offering complimentary pickup and delivery to North Vancouver residents and businesses rather than relying solely on mail-in or mobile services.
Erik emphasizes that success depends on consistent quality and service excellence: “Out of the 8 or so businesses I have started, this one brings me a feeling of satisfaction that I don't get anywhere else.” He notes the reward comes from witnessing customer gratification — “it doesn't even have to be a set of high-end knives” to create meaningful impact when someone who values sharp edges prepares meals.
